Ramen

I was a Ramen virgin for a long time. It wasn’t until I watched Hikaru No Go, a Japanese anime that my brains processed its existence. Who said cartoons were bad for you. They can totally give a world view of things.. in this case, of noodles.
The main character Hikaru, who loves Ramen, often goes to a Ramen place. He slurps the noodles loudly and that noise would get me every time. It always made me wonder just how good Ramen is.
However, due to the insufficient amount of space in my tummy, I never bothered to explore Ramen. Most of the space was already occupied with Malaysian, spicy food. But then, as if the Ramen Gods thought it was time, I had the most life changing conversation in my life. With my bro in law.

Ironically, we were sitting at an Udon place eating Udon noodles. At that time, I only had my eyes on Udon. He proceeded to give an inspirational Ramen speech. A speech that trumps even the greatest speech on earth. It moved me. Not to tears, but to eat my very first bowl of Ramen Noodles soon after.
I think I nearly died. I was hooked. Totally obsessed. A ramen freak.
I mean.. I get pretty worked up when I’m hungry. Mr. V always says, a hungry Ai Ping is an angry Ai Ping. Yet, somehow I can have the (I’ll try not to kill) patience to squeeze through a rowdy, after concert crowd, get stuck in heavy traffic caused by the same concert crowd and then wait in line at a Ramen joint on the coldest day of the year. And you know how ridiculously long the line can get at any great Ramen joint.

Besides, instant noodles were a big part of my life… until I quit. But I’ve not been able to fill that void. That chewy, bouncy noodles void. Then, there was Ramen.
Nutrient dense rich, delicious broth made from bones, fat and marrow of both chicken and pork that leaves a sticky sheen of gelatin gloss on your lips as you devour them. Tiny fats swimming in the surface ommph the umami factor with fresh chewy and bouncy noodles, ‘soft yolk’ eggs and slices of thin, melt in the mouth pork belly.
Aaah… this is the ultimate comfort food.

The trick to a superb broth is:
1. Both chicken and pork is used along with onions, garlic, leeks and mushrooms.
2. Not only bones are used, but fats, collagen and marrows are used to make it gelatinous and give it its depth in flavor.
3. Broth has to be simmered for 6 – 12 hours. The longer the time, the more gelatin develops in the soup.
4. As for color, if you like your broth to be white, you will have to wash the bones off any bits of dark marrow or coagulated blood.
Love soupy noodles? Then you’re going to love this Hand-Torn Noodles. Hand-torn noodles cooked in anchovies broth until silky smooth, chewy & bouncy with pork & mushroom, shrimp, fried anchovies & shallots.

Nutella milk

2-INGREDIENT NUTELLA HOT CHOCOLATE

Hot chocolate + Milk = The Best Hot Chocolate EVER!!! You will love this Nutella Hot Chocolate recipe.

INGREDIENTS:

  • 2 Tbsp. Nutella
  • 1 cup milk (any kind)
  • optional toppings: whipped cream, marshmallows, chocolate syrup, chocolate shavings

DIRECTIONS:

  1. Heat milk in a small saucepan over medium-high heat until steaming (not boiling), stirring occasionally.
  2. Add in the Nutella, and whisk until dissolved.
  3. Serve immediately, either plain or with your desired toppings.
Ali’s Tip:
Add in a pinch of espresso powder for an extra coffee-ish taste!

ButterBeer From Harry Potter

Only a few live up to the real thing at the Harry Potter theme park at Universal.
It must be served chilled, preferably frozen (like a slush drink), it must have a frothy head, a buttery-scotchy flavor, and non-alcoholic.
This is a list of those that come the closest to meeting those requirements; worthy of serving at your next Harry Potter party.
It’s not the easiest ones (like just mixing butterscotch syrup with cream soda), it’s the ones that most closely match the version from the Wizarding World of Harry Potter at Universal Orlando Resort®.  So many recipes add alcohol, serve it hot (which was another option from the Harry Potter book series), and have no foamy head.

Harry Potter Butterbeer Recipe #5

Ingredients

  • 1 quart Butter brickle or vanilla ice cream
  • 1/4 cup Butterscotch syrup
  • 32 oz Cream soda

Instructions

  1. Place 4 (16-ounce) glasses in freezer and chill for at least 20 minutes
  2. Mix ice cream and cream soda in a blender until combine
  3. Divide between the frosted glasses
  4. Top each glass with whipped cream, if desired
  5. Serve with spoons and straws

Harry Potter Butterbeer Recipe #4

This one’s from the Food Network.  This one is served warm according to the recipe, but you could just as easily chill or freeze the drink before serving.

Butterbeer Recipe #4

Ingredients

  • 1/4 cup sweetened condensed milk
  • 1/4 cup butterscotch topping
  • 2 tablespoons whipped butter room temperature
  • 1 1/2 cups  vanilla cream soda

Instructions

  1. Combine condensed milk, butterscotch topping, and butter in a glass heatproof measuring cup.
  2. Heat in microwave for 1 minute.
  3. Remove and stir until butter has melted and incorporated into mixture.
  4. Meanwhile heat cream soda in another heatproof measuring cup for 1 minute 30 seconds.
  5. Divide butterscotch mixture between 2 (10 to 12-ounce) mugs.
  6. Fill mugs with heated cream soda and stir thoroughly.
  7. Serve garnished with an old-fashioned butterscotch candy stick.

Harry Potter Butterbeer Recipe #3

I found this one on e-How.  Again, hot and again, you could freeze or cool before serving.  I liked how this one used butterscotch chips and the coffee creamer.  Adds a real different dimension that still stays on track with the Harry Potter theme park version.

Butterbeer Recipe #3

Ingredients

  • 10 OZ of Cream Soda 1 & 1/4 cups
  • 1 Tbsp of Salted REAL Butter
  • 1/2 Cup Butterscotch chips
  • 1/4 Cup Original Coffee Mate Liquid Creamer

Instructions

  1. Put the Butterscotch Chips and Butter in a microwave safe bowl. Heat for 30 seconds. Stir and Heat for another 30 seconds.  Now add your Creamer to the bowl.
  2. Microwave in 30 Second increments again. Stirring each time.   It usually takes about 4 times (2 minutes) to get the right consistency.  Set your mixture aside.  The chips and butter should be a thick stir-able paste.
  3. Heat Cream soda in the microwave for 90 seconds.  BE VERY CAREFUL!   Microwaves times vary.  Make sure not to over heat the Cream Soda or all of the fizz will be gone.
  4. Pour Butterscotch mixture into heated Cream Soda.
  5. Stir & Serve!

Harry Potter Butterbeer Recipe #2

Again, one that I modified to fit the requirements of the Wizarding World of Harry Potter park version.  This one just sounds delicious!!

Butterbeer Recipe #2

Ingredients

  • 1 pint of vanilla ice cream softened
  • 1/2 stick butter, at room temperature
  • 1/3 cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 24 oz. vanilla cream soda (very cold)

Instructions

  1. Allow ice cream to soften, about 30 minutes, and bring butter to room temperature, about 2 hours
  2. Blend butter, sugar, and spices in large bowl
  3. Add to ice cream and freeze
  4. Heat cream soda in a pot until warm but still carbonated (at least 3 minutes).  You could also just go with the very cold cream soda (my preference) and have a more frozen/slushy drink.
  5. Fill each glass with a scoop of ice cream mixture and pour warmed or chilled cream soda over ice cream
  6. Serve!

Harry Potter Butterbeer Recipe #1

This was the recipe put out by AP, FoxNews, and just about every other site after the Wizarding World of Harry Potter park opened.  Seems to be the most likely ingredients, but doesn’t serve it cold or frozen, like the park.  The final result does seem to be most like the park version, just needs to be frozen.

Butterbeer Recipe #1

Ingredients

  • 1 cup light or dark brown sugar
  • 2 tablespoons water
  • 6 tablespoon butter
  • 1/2 teaspoon  salt
  • 1/2 teaspoon cider vinegar
  • 3/4 cup heavy cream divided
  • 1/2 teaspoon rum extract
  • 4 bottles (12 oz. bottles) cream soda

Instructions

  1. In a small saucepan over medium, combine the brown sugar and water. Bring to a gentle boil and cook, stirring often, until the mixture reads 240 F on a candy thermometer.
  2. Stir in the butter, salt, vinegar and 1/4 heavy cream. Set aside to cool to room temperature.
  3. Once the mixture has cooled, stir in the rum extract.
  4. In a medium bowl, combine 2 tablespoons of the brown sugar mixture and the remaining 1/2 cup of heavy cream. Use an electric mixer to beat until just thickened, but not completely whipped, about 2 to 3 minutes.
  5. To serve, divide the brown sugar mixture between 4 tall glasses (about 1/4 cup for each glass). Add 1/4 cup of cream soda to each glass, then stir to combine. Fill each glass nearly to the top with additional cream soda, then spoon the whipped topping over each.
